Flaxseed hull is the mechanically decorticated outer layer of brown or golden flaxseed. It is rich in mucilage (soluble fibre), lignans (primarily secoisolariciresinol diglucoside — SDG), and a residual protein–fibre matrix. The high WHC and swelling capacity dominate its behaviour in food systems.

3.1 Water Adjustment for High-WHC Products
The high WHC (6–8 g/g) of flaxseed hull means it competes for free water in formulations.
Rule of thumb:
- For every 1 g of hull added, increase total formula water by 3–5 g.
- In doughs: add water as 50% pre-hydration (stand 10 min) + 50% in final mix.
- For batters: pre-blend hull with a portion of total water (1:8 hull:water) 5 min before adding other dry ingredients.
